CENTER FOR HOSPITALITY AND CULINARY ARTS: Adaptive Reuse of Tabakhane Building in Safranbolu

COURSE DESCRIPTION
Architect or not, We all enjoy food. It is not only a basic need, it is a profession, a research topic, a form of self-expression and art. Including both professionals and the curious, food is a major attraction for crowds and holds an undeniable space in the hospitality industry.
In this learning track, the emphasis is on awareness of design problems within an historical context and unique interpretations of "Hospitality and Culinary Arts Center" by examining the relation of a given design space with the character, texture, nature, and foodscape of Safranbolu.
The students are not only expected to integrate the existing historical Tabakhane building into their design, but also bring it to the spotlight by having an adaptive reuse strategy which makes the building an essential part of the project.
For this studio, the students are asked to develop their own scenarios and concepts of a Hospitality and Culinary Arts Center project for a site in Safranbolu by considering “Genius Loci” of the location. They are asked to design a center, which provides a welcoming space for the people visiting Safranbolu, and offers the locals and the visitors to interact around the unifying concept of food. The culinary center is expected to have educational, social, and commercial functions offered by each student in their unique understanding of culinary arts.
Students should be ready to use their imagination for a good scenario, and have the courage to draw correct and creative layouts of kitchens, restaurants, multipurposes rooms, and much more! Understanding the properties of the location and experimenting with the organization of the program are the main topics within this theme.
The case study analysis will support and is moreover essential for this assignment, as the student will experience researching and documenting (through writing, drawing, sketching, modeling, etc.) an existing example of similar design problems as well as getting familiar with the relevant terms. The course will be supported by various readings and lectures related to the given topic.
METHOD OF LEARNING
ARCH 202, ARCH 301 and Arch 401 are applied courses in the form of a studio. The studio is the essential environment where students come together with the instructors to discuss and develop their term projects by class discourses, panel or table critics, and individual working hours based on learning by doing understanding.
COURSE OUTCOMES
1. The student is able to define a place with the help of tangible and intangible elements and concepts.
2. The student is able to formulate a guiding theme and is aware that this should structure the design activities and the required spaces.
3. The student can integrate information from different scales in the design and offer a holistic approach to an ill-defined design problem.
4. The student can analyze and interpret a given program of requirements, the location, and the surrounding landscape. The student shows awareness of the value of this interpretation for the design and offers unique, flexible solutions that have future potential.
5. The student can document the design process in architectural signatures, sketches, and models.
